  • 1 (15.25-ounce) box yellow or butter cake mix
  • 3/4 cup vegetable oil
  • 3/4 cup pineapple juice
  • 4 large eggs

  • 2 cups powdered sugar
  • 3/4 cup pineapple juice
  • 4 tablespoons unsalted butter

INSTRUCTIONS:

  1. Preheat the oven to 325°F and grease and flour a 10 to 12-cup Bundt pan.
  2. Use an electric mixer to combine the cake mix, vegetable oil, pineapple juice, and eggs in a large bowl.  Beat about 2 minutes.  Pour the batter into the prepared pan.
  3. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean and the cake is just starting to pull away from the sides.  Allow the cake to start to cool in the pan while you make the glaze.

  1. Lay the zucchini strips out across a cooling rack (cooling rack allows excess water to drain). Sprinkle salt across the tops of the zucchini and let sit for about 10-15 minutes to let the water sweat out of the zucchini. Pat the water off the zucchini and then flip them over and repeat with the next side. Wipe off excess salt with a towel.

  2. PAN FRY: Heat 1 teaspoon vegetable oil in a seasoned skillet over medium heat. Add tortilla and cook until its golden and starts to brown in spots, about 20 seconds, then flip and cook until other side is golden. The tortilla should still be soft and pliable, not crispy.

  • 1/3 cup cilantro , rough chopped

Dressing:

  • 1/3 cup fresh lime juice , more if desired

  • 1 teaspoon agave (or any sweetener)
  • 2 tablespoons fresh cilantro , finely chopped
  • 1/2 teaspoon granulated garlic

  • 3 tbsp olive oil - divided
  • 6 boneless skinless chicken breasts - pounded to equal thickness
  • salt + pepper - to season
  • 2 tbsp dried Italian seasoning
  • 3 tbsp butter - divided
  • 2 shallots - minced
  • 4 cloves garlic - minced
  • 2 (15 ounce) cans artichoke hearts - drained and roughly chopped
  • 4 ounces fresh baby spinach
  • 1/2 cup low-sodium chicken broth - or water
  • 1.5 cup half-and-half - plus more as needed
  • 1/4 cup Parmesan - shredded
  • 1/2 cup mozzarella - shredded
  • Fresh parsley - to garnish

INSTRUCTIONS:

  1. Prepare the chicken - Transfer chicken breasts to a large mixing bowl. Drizzle with approximately 1 tablespoon of olive oil and season with salt, pepper, and Italian seasoning, mixing well to coat the entire surface of each chicken breast.
  2. Cook the chicken - Heat a large skillet over medium-high heat. When the pan is hot, drizzle with approximately 1 tablespoon of olive oil and swirl to coat the bottom of the pan. Work in batches, if needed (it took me two rounds to cook the 6 chicken breasts), to cook the chicken until golden, approximately 5-6 minutes per side, (or until nearly cooked through (see notes)).   • 14 oz (400g) red kidney beans, drained
  • 7 oz (200g) black beans, drained
  • 1 cup shredded Cheddar Cheese (or Monterey Jack)
  • 1 cup shredded mozzarella cheese

INSTRUCTIONS:

  1. Heat oil in large heavy-based pot (or casserole pot) over medium-high heat. Add onions and sauté until transparent, then add the green peppers (or capsicum) and garlic, sautéing for a further minute until the garlic is fragrant. 
  2. Add beef and cook until browned, breaking up any big chunks with the end of your wooden spoon. Stir in the cumin, chili powder, paprika and salt and mix through until beef is fully coated in the seasonings.
