  • 4 - 5 pork chops , boneless (~ 150-200g/5-7oz each) (Note 1)
  • 1/2 tsp garlic powder
  • Salt and pepper
  • 2 large onions , sliced into rings (brown, yellow or white)
  • 2 garlic cloves , minced
  • 1.5 tbsp / 25g butter (or olive oil)
  • 1 tsp oil , if needed
  • Salt and pepper
  • 1 cup/250ml beef broth/stock , low sodium
  • 2 tbsp flour
  • 4 slices cheese (Note 2)
  • Finely chopped fresh rosemary leaves

  1. Caramelise Onions: Melt butter on medium (or medium low for strong stoves). Add onion and garlic, cook 15 minutes until golden brown and caramelised, stirring regularly (see video). Remove from skillet.

  3. Sear: Add oil into skillet if needed. Turn heat up to high. Sear chops 1 minute on each side until nicely browned but not cooked inside. Remove onto plate.

YAY!! Its the weekend! We’re suppose to have rain all weekend but the weather man seems to be wrong ALOT lately!! So fingers crossed he is this weekend to. And I plan on drinking a few of these Limoncello Vodka Coolers which would make the day sunny regardless!!
Limoncello is a lemon liqueur made in southern Italy. It’s lemony and sweet and can easily be sipped on its own. I happen to love frosted glass and most Limoncello comes in a frosted glass bottle which of course adds to the appeal. I wanted a cocktail that wasn’t overly sweet so in with the Vodka. The two together are bright, refreshing and that color come on!!
My favorite thing about the Limoncello Vodka Cooler is that its so simple to make. Equal parts Limoncello to Vodka and lots of ice!! A little lemon garnish doesn’t hurt either, it adds some fancy schmancy to the glass and who couldn’t use a little of that?

INGREDIENTS:

  • 2.5 oz. (1/3 cup) Limoncello
  • 2.5 oz. (1/3 cup) Vodka
  • Ice
  • Lemon for garnish

  2. Put all the ingredients in a mixer or blender. Add the butter first, followed by icing sugar, and cornstarch and salt.

  5. Place a piece of baking paper on the baking tray. 
  6. Apply some oil to the paper with a bakery brush.

HAMBURGER STEAKS:

  • 1 1/4 pounds ground beef (85% lean)
  • 2 tsp Worcestershire sauce
  • 2 tsp Mc Cormicks Montreal Steak Seasoning
  • 1/4 cup crushed pork rinds* (or 1/4 cup breadcrumbs if not low carb)
  • 1/4 cup heavy cream
  • 1 tbsp fresh minced parsley
  • 1 tsp oil
  • salt and pepper

MUSHROOM AND ONION GRAVY RECIPE:

  • 1/4 cup diced onions
  • 8 oz sliced button mushrooms
  • 1/4 cup water
  • 1/3 cup heavy cream
  • 2 tbsp whisky (brandy,bourbon, or rum) (optional)
  • 1 tsp beef base (bouillon)
  • 1 tbsp butter
HAMBURGER STEAK AND GRAVY RECIPE (WITH MUSHROOM GRAVY)


INSTRUCTIONS:
PREPARATION:
Make a panade by soaking the pork rinds (or bread crumbs) in 1/4 cup of heavy cream until absorbed - about 10 minutes. Mince the parsley and finely dice the onions.
METHOD:
Add the ground beef to a medium bowl, breaking it up as you do. Sprinkle the Worcestershire sauce, steak seasoning, and parsley over the beef. Add the soaked pork rinds (or bread crumbs). Mix with a hand mixer until the ingredients are just combined.
Divide the seasoned ground beef into 4 even portions and form into patties. Season the outside with salt and a hefty amount of coarse black pepper. (Lots of pepper gives the hamburger steak a wonderful savory flavor.)
COOK:

  1. Place a large skillet or saute pan over medium high heat. When hot, add 1-2 teaspoons of oil and swirl to coat the pan.
  2. Add the hamburger steaks and cook for approximately 3 minutes per side. Remove the steaks from the pan and cover loosely with foil. Turn the heat down to medium.
  3. If there is not a lot of oil left in the pan, add 1 tablespoon of butter and the mushrooms, stirring to coat all of the mushrooms. Cook for 1 minute. Stir and push the mushrooms to the sides of the pan. Spread the onions in the center of the pan and cover for 1 minute.

  • 2 teaspoons cornstarch

Air Fryer Steak Bites & Mushrooms

INGREDIENTS:

  • 1 lb. steaks , cut into 1” cubes & patted dry
  • 8 oz. mushrooms (cleaned, washed and halved)
  • 2 Tablespoons Butter , melted (or oil)
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • salt , to taste
  • Black pepper , to taste
  • Minced parsley , garnish
  • Melted butter for finishing , optional
  • Chili Flakes , for finishing, optional

Air Fryer Steak Bites & Mushrooms

INSTRUCTIONS:

  1. Combine the steak cubes and mushrooms. Coat with the melted butter and then season with Worcestershire sauce, garlic powder, salt and pepper.
  2. Preheat the Air Fryer at 400°F for 4 minutes.
  3. Spread the steak and mushrooms in even layer in air fryer basket. Air fry at 400°F for 10-18 minutes, shaking and flipping and the steak and mushrooms about 3 times through cooking process (time depends on your preferred doneness, thickness of the steak, size of the air fryer).

Green Bean and Hamburger Casserole (Low-Carb)
INGREDIENTS:

  • 1 pound ground beef 
  • 12oz bag French cut green beans, frozen (cooked)
  • 1 cup mushrooms, sliced
  • 1 small onion, diced, 2 1/2 ounces 
  • 2 stalks celery, diced 

Sauce: 

  • 1 cup cheddar cheese, shredded 
  • 1/2 cup heavy cream 
  • 1/2 teaspoon salt 
  • 1/2 teaspoon pepper 
  • 1/8 teaspoon garlic powder

INSTRUCTIONS:

  1. Cook/Steam green beans. Brown the hamburger, onion, celery and mushrooms; drain the fat.
  2. In a microwave safe bowl mix all the sauce ingredients and cook for 2-3 minutes, stirring occasionally until the cheese is melted.
  3. Mix all ingredients in a casserole dish. Bake, uncovered, at 350º for 20 minutes until hot and bubbly

INSTRUCTIONS:

  1. Combine one stick of butter and ¾ of a cup of Swerve sweetener in mixing bowl. Mix butter and Swerve together until creamy.
  2. In another bowl, combine almond flour and baking powder.
  3. In the mixing bowl with the butter mixture, add 1 beaten egg and 1 tsp of vanilla. Mix together until smooth.
  4. Add dry ingredients to wet ingredients, and mix on high speed until thoroughly combined.
  5. Place the dough in plastic wrap. Wrap the dough tightly, and place in the fridge for at least 1 hour.
  6. After 1 hour remove the dough from the fridge and  Preheat the oven to 325 degrees
  7. Roll the dough into small balls about the size of a large marble. Place 12 on a baking sheet. These cookies will expand so leave space between each cookie.
  8. Using a fork, press down gently on each of the cookie dough balls*.
  9. Bake the cookies for 10-15 minutes, remove the cookies when they are golden brown. Let the cookies sit and cool on the baking sheet for several minutes. They will harden as they cool, making them easier to remove.

  • 1 can Rotel tomatoes
  • 1 12 oz bag steamed riced cauliflower
  • 2 tablespoons homemade taco seasoning or taco seasoning packet
  • 3/4 cup chicken broth
  • 1/3 cup diced onion
  • 1/3 cup diced green pepper
  • 3 garlic cloves minced
  • 2 cups cooked chicken shredded (I prepared mine in the slow cooker)
  • 1 1/2 cups cheddar cheese
  • 1/2 cup Monterrey jack cheese

INSTRUCTIONS:

  1. In a cast iron skillet, melt butter then saute onion, pepper, and garlic until softened.
  2. Steam riced cauliflower in microwave according to package directions.
  3. Add homemade taco seasoning, Rotel, chicken broth, and cauliflower to skillet.
  4. Stir to combine then cook on medium/low approx 10 minutes until extra liquid is absorbed.

Smothered Chicken with Creamed Spinach, Bacon, Mushrooms

Easy, gluten free, low carb, Mediterranean-style recipe, packed with protein and vegetables.  This tasty chicken is smothered with creamed cheese, bacon and mushrooms, and baked to perfection in the oven!

INGREDIENTS:
Chicken:

  • 1 tablespoon butter
  • 1.5 lb chicken breast (4 small chicken breast or 2 large chicken breast, halved)
  • salt
  • 1/4 teaspoon lemon pepper seasoning
  • 1/4 teaspoon paprika

Creamed spinach:

  • 1 tablespoon vegetable oil
  • 10 oz spinach fresh
  • 4 garlic cloves minced
  • 2/3 cup half and half
  • 2/3 cup mozzarella cheese shredded

Other Ingredients:

  • 1 tablespoon vegetable oil
  • 4 oz mushrooms sliced
  • 4 slices bacon cooked, chopped
  • 4 slices Pepper Jack cheese or Monterey Jack Cheese with Jalapenos

INSTRUCTIONS:

  1. Preheat the oven to 375 F.
  2. Butter the bottom of the baking dish (I used an oval casserole dish measured 13 inches x 9 inches x 4 inches deep).
  3. Generously season chicken breasts on both sides with salt, lemon pepper seasoning and a small amount of paprika. Place the chicken breasts, flat side down, into the greased baking dish and bake for 15-20 minutes at 375 F.

How to make creamed spinach:

  1. In the mean time, heat 1 tablespoon vegetable oil in a large skillet on medium heat. 
  2. Add spinach and cook for only 1 or 2 minutes, covered, until the spinach is thoroughly heated through and start to wilt. Remove from heat. 
  3. Add minced garlic and half and half. Bring to boil. Add shredded mozzarella cheese and keep stirring, on high heat, until mozzarella cheese starts to melt - about 30 seconds. 
  4. Reduce heat to simmer and keep stirring until you have a nice, smooth creamed spinach - about 30 seconds or 1 more minute. Season with salt to your taste. 
  5. Remove from heat.
