Dressing / Marinade:

  • 1/3 cup honey
  • 3 tablespoons whole grain mustard
  • 2 tablespoons smooth and mild Dijon mustard
  • 2 tablespoons olive oil
  • 1-2 tablespoons Apple cider vinegar (or white vinegar), (OPTIONAL -- to cut through the sweetness)
  • 1 teaspoon minced garlic
  • Salt to season
  • 4 skinless and boneless chicken thighs or chicken breasts

For Salad:

  • 1/4 cup diced bacon, trimmed of rind and fat
  • 4 cups Romaine lettuce leaves, washed
  • 1 cup sliced grape or cherry tomatoes
  • 1 large avocado, pitted and sliced
  • 1/4 cup corn kernels
  • 1/4 of a red onion, sliced

INSTRUCTIONS:

  1. Whisk marinade / dressing ingredients together to combine. Pour half the marinade into a shallow dish to marinade the chicken fillets for two hours if time allows. Refrigerate the reserved untouched marinade to use as a dressing.
  2. Heat a nonstick pan (or grill pan or skillet) over medium heat with about a teaspoon of oil and sear / grill chicken fillets on each side until golden, crispy and cooked through. (Grill in batches to prevent excess water being released.) Once chicken is cooked, set aside and allow to rest.

  • 1 Tbsp olive oil
  • 1 (14.5 oz) can petite diced tomatoes (fire roasted would be good)
  • 12 ounces uncooked orzo pasta
  • 2 ¾ cups water
  • 1 cup shredded Parmesan cheese
  • 1 cup diced onion
  • 1 Tbsp minced garlic
  • ½ cup chicken broth
  • 1 ½ pounds chicken breasts
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • 3 cups chopped spinach

INSTRUCTIONS:

  1. Turn your Instant Pot to the saute setting. When the display says HOT add in the olive oil and swirl it around. Add in the onion and saute for 4 minutes. Then add in the garlic and saute for 20 seconds. Deglaze the pot with the chicken broth. 
  2. Place the chicken in a single layer in the bottom of the pot. Sprinkle the salt, pepper and Italian seasoning over the chicken. Dump the tomatoes over the top of the chicken. 
  3. Pour the orzo and water into a pan* that fits inside your Instant Pot. Using a sling* lower the pan on top of the chicken as evenly as possible. (I covered my pan)

  1. Heat the heavy whipping cream and 2 tbsp of butter in a pot over medium high heat.

  • 16-20 ounces salmon fillet(s), skin on
  • Kosher salt/ freshly ground black pepper

  1. Place the eggs in a blender or small food processor.  Blend the eggs alone for around a minute, so they will be ready to adsorb the oil. 
  2. Add lemon juice, dry mustard and salt, and mix in with the eggs.  With the blender running, SLOWLY start adding the oil, a few drops at a time, until the liquid begins to thicken up some; then you can start adding the oil in a thin, steady stream. 
  3. Continue blending until all the oil is incorporated.  Season the mayonnaise with salt and pepper, to taste.

**Raw Egg Warning… to reduce the risk of salmonella or other food-borne illness, use only fresh, clean eggs with intact shells, from a trusted source.  Avoid contact of egg white/egg yolk with outer shell.

Keto French Toast

INGREDIENTS:
Keto Bread:

  • 1 1/2 cup almond flour
  • 2 Tablespoons coconut flour
  • 2 Tablespoons baking powder
  • 6 large eggs
  • 3/4 cup oil
  • 1 teaspoon cinnamon

To Make French Toast:

  • 2 large eggs
  • 3 Tablespoons unsweetened almond milk ( or full fat coconut milk or heavy cream)
  • 1/2 teaspoon ground cinnamon
  • 1 pinch salt
  • 1 small bit of butter for skillet

INSTRUCTIONS:

  1. To Make Keto Bread
  2. Preheat oven to 375 degrees F. Line a standard bread loaf pan (see video for reference) with parchment paper.
  3. In a medium mixing bowl, whisk together all of the ingredients until well combined.
  4. Pour the batter into the loaf pan and "tap/drop the pan" from about a 1/2 inch height onto your counter top a few times to work the air bubbles out of the batter. Regardless of the size of your loaf pan, don't fill it more than 3/4 of the way full. Bake for 30 minutes, or until toothpick comes out clean. Allow loaf to fully cool before slicing.

Pepper Jelly Cheese Dip

INGREDIENTS:

  • 2 8oz blocks of cream cheese, softened
  • 2 cups of shredded cheddar cheese
  • 2 green onions, sliced
  • 8 Ritz crackers, crushed
  • 8 slices of bacon, chopped up
  • 1/2 cup of pepper jelly

Pepper Jelly Cheese Dip

INSTRUCTIONS:

  1. Preheat over to 350 degrees.
  2. In a pie plate combine the first 3 ingredients and smooth it out across the dish.
  3. Top with crushed Ritz and chopped bacon. (If you're making this ahead just stop here until you're closer to serving)  Bake for 15 minutes.
  4. Towards the end of baking put 1/2 cup of pepper jelly into a microwave safe container, microwave for 30 seconds at a time, stirring, until melted.
